Day 86


One more recipe.
Stir Fry Chinese Chicken
1/2 cup orange juice
1 tsp crushed garlic
1/4 cup barbeque sauce
1/4 cup Hoisin sauce
1/4 tsp ground ginger
1 lb boneless, skinless chicken breast, cut into 1 inch cubes
1 1/2 Tbsp chicken broth
2 cups cooked rice
Combine orange juice, crushed garlic, bargeque sauce, Hoisin sauce and ginger in a medium bowl; mix well. Add the chicken cubes to the sauce, cover, and marinate in the refrigerator for 1 to 2 hours, or overnight. Spray a large non-stick skillet with cooking spray; add the chicken broth and heat over medium-high heat. Add the marinated chicken to the skillet and cook, stirring frequently, for 7-8 minutes, until cooked through. Serve over rice.
